Nectarine Salad Recipe

Ingredients:

1 lb nectarines, pitted & cubed
1/2 cup sweet red pepper, chopped
1/4 cup green onions, thinly sliced
1/4 cup vegetable oil(or less)
2 tbsp lime juice
1 tbsp cider vinegar
1/4 tsp salt
1/8 tsp black pepper, ground
1 leaf lettuce

Preparation:

Combine nectarines, red pepper and onions in a small bowl. Whisk together
oil, lime juice, wine vinegar, salt and pepper. Pour over nectarine
mixture. Refrigerate. Mound on lettuce to serve.

Nutrient Value Per Serving: 178 Calories, 1 g Protein, 14 g Fat, 14 g
Carbohydrate, 137 mg Sodium, 0 mg Cholesterol.
