Ingredients:

1 red or green pepper, cut in julienn, e strips (or both)
1 cup quartered, fresh mushrooms
1 onion, coarsely chopped
4 cup hot cooked penne pasta, drained
1 cup monterey jack cheese, shredded

Preparation:

Place veggies and 2 tbsp water in a covered microwaveable dish. Cook on
high for 4-5 minutes. Drain veggies and toss with pasta and cheese. Makes
2 servings.
