Mix together the chicken, grapefruit sections, and
celery. In a small bowl combine the lime peel, lime
juice, mayonnaise, salt and pepper. Beat with a rotary
beater until mixed and fluffy. Fold into the chicken
mixture. Line a salad bowl with snipped endive. Place
the chicken salad in the center; arrange the orange
slices around the outside edge over the endive. Chill
for at least 1 hour. Serves 6.
