Ingredients:

2 (3 oz.) chicken breasts without ski, boneless
1 1/2 cup chicken broth, fat-free
cooking spray, non-fat
1 green bell pepper, chopped
1 medium onion, chopped
1/4 cup chicken broth, fat-free
1 tsp crushed garlic
1 can (10 oz.) diced tomatoes and chilies
3 tbsp flour
1 tbsp Molly McButter?
8 slice American cheese, diced or cut into, pieces,
fat-free
1/4 tsp pepper
salt, to taste
1 package (7 oz.) no yolk noodles or dumpling, cooked

Preparation:

Cook chicken breasts in 1 1/2 cups chicken broth over low heat for 7 to 10
minutes. Cool. Dice chicken breasts adn set aside. Spray large skillet
with
cooking spray and saute green pepper and onion for 3 to 4 minutes over
medium-
low heat. Add 1/4 cup chicken broth and garlic. Continue cooking for 5
minutes. Add tomatoes and chilies.

In a small mixing bowl, whisk together flour, butter, and 1 1/2 cups
chicken
broth until smooth. Pour into skillet and cook, stirring until mixture
thickens. Add cheese, stirring until melted. Season with salt and pepper,
if
desired. Stir noodles and diced chicken into mixture and serve.
