Ingredients:

4.00 c Chopped tomatoes **SEE NOTE
1.00 c Chopped celery
1.00 c Chopped onion
0.50 c Chopped green pepper
0.75 c Red wine vinegar
0.50 c Vegetable oil
0.25 c Sugar (or sugar subst.)
2.00 tb Poppy seeds (optional)
1.00 tb Salt

Preparation:

Combine tomatoes, celery, onion and green pepper in
a large bowl. Toss lightly. Combine remaining
ingredients in a jar. Cover tightly and shake
vigorously. Pour marinade over vegetables. Cover and
chill at least 3 hours. Yield: 6 to 8 servings.
