Mani's Low-Fat Apple-Walnut Muffins Recipe

Mani's Low-Fat Apple-Walnut Muffins Recipe from the diabetic recipe collection at InformationAboutDiabetes.com

Ingredients:

3 cup whole wheat pastry flour
1/2 tsp salt
1 1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp allspice
3 eggs
1 cup buttermilk
1 2/3 cup apple juice concentrate
1/3 cup oat bran
2 cup apples, diced
1/2 cup walnuts, chopped
2 apples, sliced

Preparation:

Preheat oven to 350o. Let fruit juice concentrate thaw to a slushy
consistency. In a medium size bowl, sift together flour, salt, baking soda,
cinnamon, ginger, and allspice. Set aside

In a large bowl, whisk together eggs, buttermilk, and fruit juice
concentrate. Whisk the flour mixture into the liquid, adding bran. Stir in
diced apples and walnuts.

Line a muffin tin with baking cips; divide batter evenly among cups. Top
each muffin with an apple slice. Bake for 35 minutes.
