Indian Shrimp Recipe
Ingredients:
1.00 lb Shrimp, large
1.00 tb Olive oil
1.00 md Onion, chopped
2.00 cl Garlic, minced
4.00 c Italian plum tomatoes, canned, drained well
2.00 tb Lemon juice
0.50 ts Coriander
0.25 ts Ginger
0.13 ts Cayenne
0.25 ts Cumin
Parsley sprigs
Peel and devein shrimp. Rinse and let dry on paper
towels. In a large non-stick skillet, heat olive oil.
Add onion and garlic and saute until softened, about 3
min. Chop tomatoes and add to skillet with lemon juice
and spices. Bring to a boil; reduce heat and simmer
covered, 15 min, stirring once to blend. Stir in
shrimp and cook 3-5 min, until pink. Garnish with
parsley.
