Hearty Garlic Soup Recipe
Ingredients:
2 cup sliced onions
1 cup sliced green pepper
1 1/2 tbsp olive oil
20 garlic cloves, sliced
3 cup canned tomatoes
2 cup vegetable broth or water
3 slice dark whole wheat bread, cut in 1/4" cubes - up to 4
black pepper, to taste
In large saucepan, saut? onions and pepper in oil until soft and golden.
Add garlic and tomatoes. Reduce heat, cover pan, and simmer for 30
minutes. Add broth; heat to a boil. Add bread cubes just before serving.
Add black pepper to taste.
4 servings/Serving size: 1&1/2 cups
