Grilled Tuna With Black Bean Salsa Recipe from the diabetic recipe collection at InformationAboutDiabetes.com

Ingredients:

1 1/2 lb fresh tuna steaks, cut 1/2" thick
2 tsp olive oil
3 Sprigs fresh lemon thyme
1/2 tsp dried thyme, crushed
1/2 lime, grated zest of
freshly ground pepper, to taste
1 orange, cut in 6 wedges
BLACK BEAN SALSA
olive oil cooking spray
1 small red onion, unpeeled
1 medium red bell pepper
1 medium yellow bell pepper
1 small fresh jalepeno chili
1 large garlic, unpeeled
1 1/2 cup black beans, cooked
1 tsp orange zest, grated
1 tbsp fresh lime juice
1 tbsp olive oil
1 tbsp fresh marjoram, fresh OR
1 tsp dried marjoram, crushed

Preparation:

Marinate tuna in olive oil, thyme, and lime zest for 25 to 30 minutes
before grilling. Season with pepper. Grill or broil over medium-hot coals,
4 inches from source of heat, for 2 to 3 minutes per side ( center should
be rare). Serve with Black Bean Salsa.
Offer a wedge of orange to squeeze over tuna and beans.

BLACK BEAN SALSA
Preheat oven to 375 degrees. Lightly spray a baking pan with cooking
spray. Place unpeeled onion, bell peppers, jalapeno, and unpeeled garlic in
pan; roast for 25 minutes. Remove from oven.
Peel and dice onion. Peel and dice bell peppers, discarding seeds
and core. Mince jalapeno, discarding seeds. Peel and mince garlic.
In a bowl, toss together beans and vegetables. Add orange zest,
lime juice, olive oil, and marjoram. Serve at room temperature.
