Grilled Mackerel With Chopped Tomatoes Recipe
Ingredients:
6 5 Oz mackerel fillets
3 tsp Fresh lemon juice
1/4 tsp Freshly ground pepper
1/2 tsp Crumbled dried oregano
2 cup Chopped fresh tomato
1/2 cup Chopped fresh parsley
Arrange mackerel pieces in a shallow baking pan.
Combine lemon juice, pepper, and oregano; Sprinkle over medium-hot coals
about 3 to 4 minutes on each side, depending on the thickness of the fish.
Fish is done when it flakes easily when tested with a fork.
Place mackerel on individual serving dishes. Combine tomato and parsley
and spread decoratively around and over the mackerel. Serve fish hot.
Note: This recipe may also be prepared in an oven broiler.
