Ingredients:

1 lb ground beef, lean
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup green pepper, finely chopped
1 tsp salt, or to taste
1 tsp chili powder, or to taste
3/4 tsp black pepper, freshly ground
2 cup tomatoes, diced
1/2 cup cooked rice

Preparation:

Combine the ground beef, celery, onion, and green pepper in a
nonstick skillet. Cook until the meat is just browned. Drain the
accumulated fat. Add the tomatoes, cooked rice, chili powder and
salt and pepper to taste. Cover and simmer over low heat for about 45
minutes, adding water occasionally to keep meat from sticking to skillet.

Each 1/2 cup serving may be exchanged for 2 Medium-fat meat, 1 Vegetable
