2 tbsp water
1/4 cup soy sauce
1/2 cup red wine
1 tbsp sherry extract
1 tbsp dijon mustard
1/2 tsp hot pepper sauce
2 tbsp vegetable oil
1/2 tsp pepper
3 tbsp dry bread crumbs
Preparation: Split hens in half down the back. Place in a shallow pan. Combine remaining
ingredients, except bread crumbs and pour over hens. Marinate several
hours, turning occasionally. Preheat oven to 350. Sprinkle half of the
bread crumbs over hens. Bake 30 minutes. Turn hens, sprinkle with remaining
crumbs. Bake 30 minutes more.
Per serving: 26g protein, 14g fat, 7g carb., 1546mg sodium, 76mg chol., 275
calories.
