Crazy Fruit Upside Down Cake Recipe





Ingredients:

2 cup (or 3) chopped fruit *
1 tbsp vegetable oil
1/2 tsp (to 1 tsp.) cinnamon or nutmeg
1 ************cake************
1 large egg
1/4 cup vegetable oil
2 tbsp milk
1/2 cup unsweetened fruit juice **
1 1/2 cup unbleached all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda



Preparation:

* Use pineapple, banana, blueberries, peaches, etc.
** Use apple, orange, or pineapple juice

Combine fruit, 1 T. oil and cinnamon or nutmeg in bowl. Toss together.
Spoon into oiled 8" square baking dish. Set aside.
Beat together egg, 1/4 cup oil, milk and fruit juice. Combine flour,
baking powder and baking soda. Stir into juice mixture and beat until
smooth. Pour batter evenly over fruit and smooth top. Bake at 350~F. for
30 minutes. Cool to just warm and turn out onto a serving dish. Serve
plain or with ice cream or whipped cream. Serves 4 to 6
