Clam Chowder

Ingredients

  • 1/2 cup mushrooms, chopped
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 1/4 cup margarine
  • 1 quart water, boiling
  • 1 cup carrots, diced
  • 1 cup potatoes, diced
  • 1 cans clams, chopped
  • 1 tbsp pimentos
  • 1/4 cup wine, dry white

Preparation:

  1. Saute mushrooms, celery, and onion in 1/4 cup margarine in a heavy saucepan.
  2. Add the water, carrots, and potatoes.
  3. Simmer for 20 minutes.
  4. Make white sauce with 1/4 cup margarine, 1 cup skim milk, and 1/4 cup flour by heating it together until thickened.
  5. When the vegetables are tender, add clams with their juice, the pimentos, and white wine.
  6. Add white sauce.
  7. Cook 10 minutes longer.
