Chocolate Mint Cheesecake Recipe

Chocolate Mint Cheesecake Recipe from the diabetic recipe collection at InformationAboutDiabetes.com

Ingredients:

1 1/4 cup graham cracker crumbs
1 tbsp butter, melted
1 tbsp water
2 tbsp cocoa powder
16 oz low-fat cream cheese
1/4 cup sugar
1/4 cup peppermint schnapps
2 eggs, beaten
3/4 cup cocoa
1 tsp vanilla

Preparation:

Preheat the oven to 325 degrees. To make the crust, combine the first four
ingredients. Press into the bottom of a springform pan and bake for 5
minutes. Remove crust from oven and let cool.

Combine the cream cheese and sugar and beat well. Add the remaining
ingredients and pour over the crust. Raise the oven temperature to 375
degrees and bake for 40 minutes until set. Cool before serving.

Barbados is very prevolent in Barbados and we have waaaaaaay too many amputations. I think if people with a small budget have little or no choices here.

I am 46, morbidly obeast and

I am 46, morbidly obeast and developed type 2 a few months ago. I live in Barbados and a lot of things you guys can get in US or Canada I can't get her or it may cost an arm and a leg. It is very expensive to eat healthy here. I can never find any "treat" for diabetics here (that is affordable). So I would like to go into my own business of bakeing cakes and brownies etc for people like me who want a sweet fix with out the sugar and guilt. So here I am on a mission.
