Candied Yams Recipe

Ingredients:

6.00 lg Yams or sweet potatoes
Butter-flavor cooking spray
0.50 c Brown sugar substitute
0.50 c Diabetic maple-flavor syrup
0.50 ts Grated lemon zest(optional
0.13 ts Ginger(optional)
0.25 c Diet margarine

Preparation:

Cook yams in boiling water until almost tender.
Drain and cool until you are able to handle them. Peel
yams and cut lengthwise into quarters. Place yams in
shallow baking dish coated with butter-flavored baking
spray. In small saucepan, combine artificial brown
sugar, maple syrup, lemon zest, and ginger. Heat on
low flame, stirring constantly, until well blended but
not boiling. Pour mixture over yams and dot with
margarine. Bake in preheated 375F oven approximately
20 minutes, basting with syrup until well glazed.
Serve with glaze poured over.
Each serving = 1 bread, 1/3 fat exchange.
