Cook yams in boiling water until almost tender.Drain and cool until you are able to handle them. Peelyams and cut lengthwise into quarters. Place yams inshallow baking dish coated with butter-flavored bakingspray. In small saucepan, combine artificial brownsugar, maple syrup, lemon zest, and ginger. Heat onlow flame, stirring constantly, until well blended butnot boiling. Pour mixture over yams and dot withmargarine.
