NOTE: Liver is high in cholesterol, about 300 mg per3 oz servingRinse chicken livers, remove any dark spots and fat,and pat dry. Pierce each liver several times with afork. (Note: any liver could be cut into pieces aboutone or two bite size.)In a 1 quart casserole, combine livers withseasonings. Stir. Cover tightly. Microwave at Highfor 1 min, then at Medium 5-6 min or until liver ispink. Allow 5 min aftercooking time.5 servings, each 3 oz 3 protein choices, 1/2 milk 3 gcarbohydrates, 26 g protein, 4 g fat, 164 caloriesFor two servings, start with a bit less than 1/2 lbliver and half the spices (or sprinkle them from thespice container).
